This August, for the first time, we are featuring a husband-and-wife food blogger team! Please meet Maria and Josh, who, together, write the Two Peas and their Pod blog. As you might expect from a couple who are self-proclaimed “Cookie Connoisseurs,” Maria and Josh’s story is an especially sweet one: “we were best friends before we married in June 2008,” says Maria. After the wedding, Maria began posting recipes and photos on Josh’s personal blog. It wasn’t long before strangers began visiting to check out these great recipes, and a full-fledged food blog was born. The blog has seen them through culinary adventures ever since – and a full-scale kitchen remodel last year! We took advantage of their “open kitchen” policy and bent Maria’s ear on all things foodie-and food-blog related. Check out her answers below!
How did you get into cooking and blogging?
My dad loves to cook and bake and taught me at a young age. When I got married to my husband, Josh, we started a family blog and occasionally posted recipes. Our family and friends loved the recipes, so we started posting more recipes. Soon, strangers were visiting the blog, so we transitioned it into a food blog. I’ve always loved to cook and bake, but food blogging has really brought out my creative side in the kitchen. I love dreaming up new recipes and sharing those creations with family, friends, and our readers.
What’s your favorite tip for staying healthy? Eat breakfast; it really is the most important meal of the day. Also, I believe in moderation when it comes to eating. We eat healthily most of the time and exercise, but I always allow room for dessert. I don’t believe in “diets”—just living a healthy, well-balanced lifestyle.
What’s one important way you try to take care of yourself and those around you? I buy lots of fresh fruits and vegetables. We always have a fresh fruit bowl on our counter for healthy snacking.
Can you share your favorite healthy / easy / deliciously comforting recipe?
1 can of black beans, rinsed and drained and heated up
1 mango, peeled and chopped
1/2 red onion, chopped
2 tomatoes, chopped
Fresh cilantro, chopped
Romaine lettuce, chopped
1 avocado, chopped
Salsa, if desired
1. Turn the broiler on high. Spray corn tortillas with cooking spray and sprinkle with salt. Place on a baking sheet. Put corn tortillas in the oven until crispy, about five-seven minutes. Flip them once to make sure each side is crispy.
2. Top corn tortillas with black beans, mango chunks, onion, tomatoes, cilantro, lettuce, and avocado. Dress with fresh lime juice and salsa.
How did you discover this recipe? We love making Black Bean and Mango Tostadas. It is one of our weeknight “go to” meals. They are healthy, fast, and simple to make.
Do you have a zany cold remedy or unique stay-healthy routine? Get enough sleep. I go to bed early and get up early. I also work out first thing in the morning so nothing else gets in the way.
