This month’s edition of Cold Proof Cooking comes with a dose of holiday cheer, thanks to food blogger Nina Safar, who heads up the blog Kosher in the Kitch. Kosher in the Kitch is a food blog with recipes for those who love homemade food (and don’t want to spend hours slaving in the kitchen). Kosher in the Kitch There’s a lot to love about this food blog: for starters, it’s a great resource for any family, not just the kosher-keeping household. We also love the collaborative spirit of this site. Not only does it collect and share the recipes of four well-known cooks besides Nina herself, Nina also invites her fellow readers to share their favorite recipes. And we can’t help but feel like bringing people together is what food is all about, anyway! No wonder food and the holiday season go so well together – both are about enjoying and celebrating with those around you. How did you get into cooking and blogging?

The first dinner I ever cooked was Sesame Teriyaki Salmon served with couscous. It was a couple of weeks after I got married and my husband was getting a bit annoyed of having to schlep to my moms for dinner every night, while my mother was upset I wasn’t using my brand new dishes she had so carefully selected for me.

In a panic I called my older sister and told her I had to make dinner and had no idea what to cook. Give me something good and give me something easy! (I didn’t think my confidence could handle a disaster the first night in the kitchen.) I don’t remember her exact wording, but being that she is married almost 10 years with five boys, I am sure she must have laughed at my fear and told me to chill out. After that first night, I spent many more nights calling up my older sisters, my mother, my sister in laws and friends for recipes that were both quick and flavorful. Soon, I wanted instant access to good Kosher recipes. I decided to create a group on Facebook called “Kosher in the Kitch” to post recipes that I liked and hopefully encourage others to do the same. I had no idea my “online recipe book” would attract such a large amount of people! And for those really busy folks, with no time to even search the website, I started sending out weekly pre-planned dinner menus with tasty and easy dishes for the week as well as salad ideas and tips for the kitchen. What’s your favorite tip for staying healthy?

Don’t be afraid to indulge! It’s easier to maintain a healthy lifestyle when you are not restricting yourself too much.

What’s one important way you try to take care of yourself and those around you?

I always have a pot of chicken soup in the fridge! My hub is crazy about soup and once my son started eating solids, I figured it was a good idea to just cook a big pot of chicken soup with lots of veggies and keep it in the fridge for the week (not that it lasts that long!).

Can you share your favorite healthy/easy/deliciously comforting recipe?

Since it’s the holiday season and the start of Hanukkah, I thought I’d share my recipe for Zucchini Parmesan Latkes! Kosher in the Kitch Zucchini Parmesan Latkes

2 large russet potatoes, grated
2 medium zucchini, grated
1/2 cup of grated parmesan
1/2 cup of chopped scallions
3 eggs
1 tsp. garlic powder
1 tsp. salt
1 tsp black pepper
1 cup fine panko crumbs
oil for frying

Beat the eggs in a large mixing bowl. Stir in the garlic, salt & pepper. Then grate the zucchini and potatoes into a separate bowl. Squeeze the zucchini and potatoes in a kitchen towel to remove all liquid. Add grated zucchini, potato, scallions, panko crumbs & parmesan to the egg batter and combine well. (if you find the batter is too loose, add some flour, about 2 tablespoons to thicken it up) Heat up a large non stick frying pan with oil over medium heat. Using 1/4 cup measuring cup, cook the batter in batches and fry until golden brown, about 3 – 4 minutes each side. Serve warm with sour cream or apple sauce. (I am a ketchup junkie so that’s what I top my latkes with!)

I’d like to say that I work out every day and always eat my veggies, but the truth is I would rather  hop in the elevator than take the stairs and I prefer cupcakes over apples. I try and keep it balanced by having a salad before I eat my dessert, and if I want to catch up on my favorite shows, I’ll watch them while using my step machine.
